Here’s a delicious and easy recipe your family will enjoy during this busy holiday season!  Our schedules are usually full this time of year, so it’s nice to have some suppers we can put together quickly.  This dish is a nice change from the turkey and ham we just finished up over the Thanksgiving holiday, too!  Enjoy!!

Sausage and Cheese Enchiladas

Preheat oven to 350 degrees

8 -10 flour tortillas
Sauce:
1 lb. turkey sausage, mild or hot…your preference
1 tablespoon olive oil
1 medium onion, chopped
1 large garlic clove, chopped
2 1/4 cups chopped canned tomatoes (about 1 lb) do not drain
1 – 4oz. can chopped green chilies
1/2 teaspoon cumin
1/2 teaspoon salt
2 teaspoons sugar
1 chicken bouillon cube

Brown sausage in olive oil; add onions and garlic; cook until onions are tender.  Add tomatoes, green chilies, cumin, sugar, bouillon and salt.  Simmer for 15 minutes, covered, while preparing the filling.

Filling:
8 oz pkg. cream cheese, softened
2 tablespoons green onions, finely chopped
4 oz. sour cream
1/2 teaspoon salt
1 cup Cheddar cheese, grated for top of dish

In a bowl add softened cream cheese, sour cream, green onions, and salt; mix well.

Spoon several tablespoons of sauce into bottom of a rectangular baking dish.  Place about 3 tablespoons of filling in each tortilla; roll up; place seam side down on sauce in dish.  Ladle the remaining sauce over top of tortillas.

Bake for 15 minutes; top with grated cheese; bake 15 minutes more.

Serve with shredded lettuce, fresh chopped tomatoes, green onions, sour cream….whatever suits your fancy!  Mexican rice is the perfect side for these enchiladas!
