Spending time with family is something I value. So, when I got a call the other day from my cousin’s daughter to pick blueberries, I jumped at the chance! Her mom, who lives two hours away, met us there, too! We went early in the morning before the day heated up. It was good fun catching up on what our families were up to this summer, and the added bonus was we picked over 15 pounds of plump juicy blueberries at the same time! Now that I think of it, there was another bonus: I was reminded of a blueberry cobbler I used to make, and it’s a treat! Add it all together, and you get lots of good stuff!
Blueberry Cobbler ~ Quick and Easy!
3 – 4 cups blueberries
6-7 slices white bread with crust removed
1 egg
2 T. flour
1 1/4 cups sugar
1 stick melted butter
Dash of cinnamon and/or nutmeg
Vanilla ice cream
Preheat oven to 350 degrees.
Put fruit in the bottom of a 9″x 9″ buttered dish.
Tear bread into pieces and place on top of fruit.
Melt butter and mix with flour, sugar, egg, and cinnamon.
Drizzle batter over bread.
Bake for 35 – 40 minutes.
Serve warm, topped with ice cream.
