Today is a good day!! It’s the day my aunt (who’s more like a sister) and a close family friend are coming to visit! We are all about food around here, so dinner is already on my mind! Have you ever made a recipe pretty regularly, and then for whatever reason just got away from it? Well, that’s what happened to me with this Chicken Divan casserole! So tonight it’s making a comeback!! The rotisserie chicken makes it a snap! With this we’ll have a green salad with lots of fresh berries and poppy seed dressing!
3 cups rotisserie chicken, boned
4 – 5 cups fresh broccoli pieces, steamed
1 can condensed, cream of mushroom soup
½ cup sour cream
½ cup mayonnaise
2 tablespoons milk
Juice of ½ of a lemon
1 cup grated sharp cheddar cheese
Preheat oven to 350 degrees. Prepare a 2qt casserole or a 8”x11” baking dish with cooking spray. Place steamed broccoli pieces in bottom of dish. Top with chicken and set aside. In a medium bowl, combine soup, sour cream, mayonnaise, lemon juice, and milk, stirring until blended. Spread soup mixture over the broccoli and chicken. Bake uncovered for 25 minutes. Remove from oven and top with grated cheese, returning to oven for 10 – 12 minutes.
