A pot of one of these delicious soup will be perfect during this blast of frigid weather lots of us are experiencing!  Here are two very quick and easy recipe for satisfying soups that are sure to warm you up!  Both begin with cooked, deboned chicken.  When I buy rotisserie chickens I bone them right away and freeze the meat in freezer bags so I have them on hand for soups and casseroles. Some of the ingredients in these recipes I found at Trader Joe’s, but they can also be found at your grocery store, just different brands.  Our family loves both of these soups!  Here’s hoping yours will, too!

Chicken Tortellini and Vegetable Soup

1 small or ½ of a large rotisserie chicken, deboned
1 – 32 oz. carton of chicken broth
1 bag of frozen fire roasted vegetables in balsamic butter sauce (this I find at Trader Joe’s)
1 – 10 oz. pkg of cheese tortellini (refrigerated)
Grated parmesan or pecorino Romano cheese

In a large pot or Dutch oven add the first 3 ingredients. Heat on medium high heat just until it begins to boil. Add the tortellini. Reduce heat and continue to cook covered for 20 – 30 minutes.  Serve with grated cheese sprinkled on top!  Hot, crusty bread is perfect with this soup!

Creamy Chicken Tortilla Soup

1 small or ½ of a large rotisserie chicken, deboned
1 – 32oz. carton of chicken broth
1 – 12oz. jar of salsa
1 – 16oz. can of refried beans
1 cup of frozen roasted corn

Optional toppings:

Tortilla strips
Sour cream
Grated cheese
Chopped green onions

In a large pot or Dutch oven add all the ingredients except for optional toppings. Cook over medium high heat until bubbling. Reduce heat to low and simmer for about 20 – 30 minutes.  Serve with any or all of the topping suggestions!
